In the Fall, pumpkin rules the recipe world. I’m all for a pumpkin pie but how about a great cookie that is moist and cake-like that combines molasses and peanut butter to blow your mind?

These are delicious and not too sweet and easy to make.

2 ½ cups flour

1 tsp cinnamon

1 tsp cloves

½ tsp ginger

¼ tsp salt

2 tsp baking soda

1 ½ sticks (3/4 cup) butter, softened (to almost melted)

1 cup sugar

½ cup pumpkin puree

¼ cup peanut butter

1 tsp vanilla

1 egg

1/3 cup molasses


In bowl, whisk together flour, spices, salt and baking soda and set aside.

In mixer, cream together butter, peanut butter and sugar. Add egg and molasses. Add pumpkin and vanilla and mix until fully combined.

Add dry mixture in batches and mix on low just until combined.

Put in fridge for at least an hour. You want the dough to be cold when you bake it.

Oven 350

With large soup spoon or ice cream scoop, scoop out dough and form into balls and roll in sugar. Place on baking sheet lined with Silpat or parchment paper.

Bake 10-14 minutes until firm. Cool on wire rack.
