I LOVE CAKE! And so do many people I know. The only problem is that a cake can take a while to make and sometimes you don’t want a whole cake, just a little cake. Well, I’m about to make your day! On my hubby’s birthday, he jokingly said he wanted birthday cake for breakfast. I took him seriously and went into a panic. So, I looked online and found a lot of “Cake in a mug” recipes. I went one step further and created my own version. All you need is a microwave and in a few minutes – YOU HAVE CAKE!
This is great for when it’s someone’s birthday or you want to celebrate something and you need cake FAST. Aced a test? Have some cake! Your child’s first day of school? Send them off with cake for breakfast! Anniversary? Yup. Cake it is! Don’t you just love instant gratification?!
Here’s the cooking video:
YOU WILL NEED:
A large mug that is microwaveable
4 tbsp. flour
3 tbsp. sugar
pinch of salt
2 tbsp. cocoa powder
¼ tsp espresso powder
¼ tsp baking powder
3 tbsp. whole milk (or 2%)
2 tbsp vegetable oil
¼ tsp vanilla
1 tbsp. choc chips
For glaze or frosting:
3 tbsp heavy cream
3 tbsp choc chips
Sprinkles, coconut, nuts – whatever you want!
In medium bowl, mix dry ingredients (first 6 ingredients)
Whisk in other ingredients till well mixed.
Spray inside of mug with Pam. Pour mixture into mug. Microwave on high for 2 minutes. Check and see if it needs 30 seconds or 1 minute more.
While it cools, make glaze/frosting:
Put cream and chocolate chips in small microwaveable bowl and microwave on high for 30 second intervals, stirring each time till melted. Let cool to your liking and pour over cake. For thick ganache-like frosting, let cool completely and put in fridge till spreadable.
Plop cake out of mug onto plate. Put glaze/frosting over it. Decorate. HAPPY! HAPPY!
