Avocado toast is awesome, but let’s face it— avocados are kinda pricey and they only last about 30 seconds on your kitchen counter.
This morning I decided to try out a different protein-packed, equally green breakfast toast.
This was a really quick and easy alternative to avocado toast. I put an egg to boil while I sauteed about 2-3 handfuls of spinach. I seasoned the spinach with ground pepper and garlic powder. And I put it to the side when it was done. After about 8-10 minutes of boiling the egg, I put a piece of whole grain bread in the toaster. While I peeled the skin off the egg , the bread was toasting. Can you say multi-tasker?
Then I just plopped the spinach over the toast and cut the (not totally boiled, but it worked out) egg on top. I put a little ground pepper over the eggs and voila!
This tasted amazing and all the ingredients are affordable, accessible, and super healthy!
No shade to avocado toast though. It would’ve been an awesome addition to this recipe.
This is also a great option for the rare species of individuals who don’t like avocados (yes, they exist).
